Flat Iron Steak - One of the most tender, juicy, and flavourful cuts of steak, derived from the top blade of the chuck.

One of the butcher's best-kept-secrets. The flat-iron is richly marbled, and second only to the filet in terms of tenderness. Cook on a rippin' hot pan or grill, and slice thin against the grain.


Grass-fed steaks are ideal cooked rare to medium rare - if you prefer a more well-done steak, cook on a stove top with plenty of liquids to replace the fat, since grass-fed beef is much leaner!
